Ingredients 

Main Ingredients

  • 2 pieces boneless, skinless chicken breasts
  • ¼ cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 clove garlic, minced
  • 1 teaspoon grated ginger
  • 4 cups mixed salad greens
  • 1 cup shredded carrots
  • ½ cup sliced cucumbers
  • ¼ cup chopped green onions
  • ¼ cup chopped cilantro
  • ¼ cup chopped peanuts
  • 1 tablespoon sesame seeds

Instructions 

  1. In a bowl, mix soy sauce, honey, sesame oil, rice vinegar, garlic, and ginger.
  2. Marinate chicken in the mixture for at least 30 minutes.
  3. Preheat grill to medium-high heat.
  4. Grill chicken for 6-7 minutes on each side or until cooked through.
  5. Let chicken rest, then slice thinly.
  6. In a large bowl, combine salad greens, carrots, cucumbers, green onions, and cilantro.
  7. Top salad with sliced chicken, peanuts, and sesame seeds.
  8. Drizzle with remaining marinade or your favorite dressing.
