  • 2 pieces Chicken Breasts boneless, skinless
  • ½ cup BBQ Sauce
  • 4 cups Mixed Greens
  • 1 cup Cherry Tomatoes halved
  • ½ cup Red Onion sliced
  • 1 cup Corn Kernels cooked
  • 1 cup Black Beans rinsed and drained
  • 1 cup Cheddar Cheese shredded
  • 1 cup Ranch Dressing

Instructions 

  1. 1. Preheat your grill to medium-high heat.
  2. 2. Brush the chicken breasts with BBQ sauce.
  3. 3. Grill the chicken for about 6-7 minutes on each side, or until fully cooked.
  4. 4. Let the chicken rest for 5 minutes, then slice it.
  5. 5. In a large mixing bowl, combine mixed greens, cherry tomatoes, red onion, corn, black beans, and cheddar cheese.
  6. 6. Top the salad with sliced chicken and drizzle with ranch dressing.
