Ingredients 

Main Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1 cup coconut milk
  • 2 tablespoons lime juice
  • 1 tablespoon soy sauce
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • Salt and pepper to taste
  • 4 slices pineapple
  • 1 tablespoon olive oil
  • Fresh cilantro for garnish

Instructions 

  1. In a bowl, mix coconut milk, lime juice, soy sauce, garlic, ginger, salt, and pepper.
  2. Add chicken breasts to the marinade. Let it sit for at least 30 minutes.
  3. Preheat grill to medium-high heat.
  4. Grill chicken for 6-7 minutes on each side or until fully cooked.
  5. Brush pineapple slices with olive oil and grill for 2-3 minutes on each side.
  6. Serve chicken with grilled pineapple and garnish with fresh cilantro.
