Ingredients 

Main Ingredients

  • 4 ears Corn husked
  • 1 Pineapple peeled, cored, and sliced
  • ¼ cup Mayonnaise
  • ¼ cup Cotija Cheese crumbled
  • 1 teaspoon Chili Powder
  • ¼ cup Cilantro chopped
  • 1 Lime cut into wedges

Instructions 

  1. Preheat your grill to medium-high heat.
  2. Grill the corn and pineapple slices until charred and tender, about 10-15 minutes, turning occasionally.
  3. Remove from grill and let cool slightly. Cut the corn off the cob and dice the pineapple.
  4. In a mixing bowl, combine the grilled corn, grilled pineapple, mayonnaise, cotija cheese, chili powder, and cilantro. Mix well.
  5. Serve the elote bowl with lime wedges on the side.
