Elote Grilled Corn Recipe
Elote is a popular Mexican street food made with grilled corn on the cob, coated with a mixture of mayonnaise, cheese, chili powder, and lime juice.

- 4 ears Corn on the cob
- ¼ cup Mayonnaise
- ¼ cup Cotija cheese, crumbled
- 1 teaspoon Chili powder
- 1 Lime, cut into wedges
Preheat the grill to medium-high heat.
Brush the corn with a little bit of oil and place on the grill. Cook for about 15 minutes, turning occasionally, until the corn is charred and cooked through.
In a bowl, mix the mayonnaise and chili powder.
Once the corn is cooked, brush each ear with the mayonnaise mixture, then sprinkle with crumbled Cotija cheese.
Serve with lime wedges on the side.
