Ingredients

  • 2 Avocados halved and pitted
  • 1 Red Bell Pepper sliced
  • 1 Zucchini sliced
  • 1 tablespoon Olive Oil
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • 8 Tortillas
  • 1 cup Salsa
  • 1 cup Cilantro chopped

Instructions 

  1. 1. Preheat your grill to medium-high heat.
  2. 2. Brush the avocado halves, bell pepper slices, and zucchini slices with olive oil.
  3. 3. Sprinkle cumin and chili powder over the veggies.
  4. 4. Grill the veggies for about 3-4 minutes on each side, until they are tender and have grill marks.
  5. 5. Remove the veggies from the grill and let them cool slightly. Slice the grilled avocados.
  6. 6. Warm the tortillas on the grill for about 30 seconds on each side.
  7. 7. Assemble the tacos by placing grilled veggies and avocado slices on each tortilla. Top with salsa and chopped cilantro.
