Grilled BBQ Shrimp with Citrus Corn Salad

Shrimp Marinade
- 1 lb Shrimp peeled and deveined
- ¼ cup BBQ Sauce
- 1 tablespoon Olive Oil
Citrus Corn Salad
- 2 cups Corn Kernels fresh or frozen
- 1 Red Bell Pepper diced
- ¼ cup Red Onion finely chopped
- ¼ cup Cilantro chopped
- ¼ cup Lime Juice freshly squeezed
- 1 tablespoon Olive Oil
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
1. Preheat grill to medium-high heat.
2. In a mixing bowl, combine shrimp, BBQ sauce, and olive oil. Let marinate for 10 minutes.
3. Thread shrimp onto skewers.
4. Grill shrimp for 2-3 minutes per side, until opaque and cooked through.
5. In another bowl, combine corn, red bell pepper, red onion, cilantro, lime juice, olive oil, salt, and black pepper. Mix well.
6. Serve grilled shrimp with citrus corn salad on the side.
