Ingredients 

Main Ingredients

  • 4 slices Bread preferably sourdough
  • 1 cup Ricotta Cheese
  • 1 small Eggplant sliced
  • 2 tablespoon Olive Oil
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. 1. Heat a skillet over medium heat and add olive oil.
  2. 2. Add the eggplant slices, season with salt and pepper, and cook until tender and golden brown on both sides. Remove from skillet.
  3. 3. Spread ricotta cheese on one side of each bread slice.
  4. 4. Place cooked eggplant slices on top of the ricotta on two of the bread slices, then top with the remaining bread slices, ricotta side down.
  5. 5. Heat the skillet again and add the sandwiches. Cook until the bread is golden brown and the cheese is melted, flipping once.
  6. 6. Serve hot and enjoy!
