Ingredients

  • 2 pieces Chicken Breasts boneless, skinless
  • 1 head Romaine Lettuce chopped
  • 1 cup Cherry Tomatoes halved
  • 1 piece Cucumber sliced
  • 1 piece Orange peeled and segmented
  • ¼ cup Red Onion thinly sliced
  • ¼ cup Olive Oil
  • 2 tablespoon Lemon Juice freshly squeezed
  • 1 teaspoon Honey
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper freshly ground

Instructions 

  1. 1. Preheat the grill to medium-high heat.
  2. 2. Season the chicken breasts with salt and pepper.
  3. 3. Grill the chicken for 5-7 minutes on each side, or until fully cooked. Let it rest for a few minutes, then slice.
  4. 4. In a large mixing bowl, combine the lettuce, cherry tomatoes, cucumber, orange segments, and red onion.
  5. 5. In a small bowl, whisk together the olive oil, lemon juice, honey, salt, and black pepper.
  6. 6. Drizzle the dressing over the salad and toss to combine.
  7. 7. Top the salad with the sliced grilled chicken and serve immediately.
