Ingredients 

Main Ingredients

  • 2 pieces Chicken Breasts boneless, skinless
  • 4 pieces Hatch Chiles roasted, peeled, and chopped
  • 1 can Diced Tomatoes 14.5 oz can
  • 1 can Black Beans 15 oz can, drained and rinsed
  • 1 cup Chicken Broth
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Chili Powder
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper

Instructions 

  1. 1. Preheat your grill to medium-high heat.
  2. 2. Season the chicken breasts with salt and pepper, then grill for about 6-7 minutes on each side until fully cooked. Remove from grill and let rest.
  3. 3. In a large pot, combine the roasted Hatch chiles, diced tomatoes, black beans, chicken broth, cumin, and chili powder. Bring to a simmer over medium heat.
  4. 4. Dice the grilled chicken and add it to the pot. Stir well and let it simmer for another 15-20 minutes.
  5. 5. Adjust seasoning with salt and pepper to taste. Serve hot.
