Ingredients

  • 2 pieces Chicken Breasts boneless, skinless
  • 2 pieces Peaches sliced
  • 4 cups Arugula
  • ¼ cup Olive Oil
  • 2 tablespoon Balsamic Vinegar
  • 1 pinch Salt to taste
  • 1 pinch Black Pepper to taste

Instructions 

  1. 1. Preheat the grill to medium-high heat.
  2. 2. Season the chicken breasts with salt and pepper.
  3. 3. Grill the chicken for about 6-7 minutes on each side, or until fully cooked.
  4. 4. While the chicken is grilling, slice the peaches.
  5. 5. In a mixing bowl, combine arugula, sliced peaches, olive oil, and balsamic vinegar.
  6. 6. Once the chicken is done, let it rest for a few minutes before slicing it.
  7. 7. Add the sliced chicken to the salad and toss everything together.
  8. 8. Serve immediately and enjoy!
