Ingredients 

Chicken

  • 8 pieces Chicken thighs bone-in, skin-on

Mango Ancho Sauce

  • 1 cup Mango peeled and diced
  • 1 piece Ancho chili seeded and soaked
  • 2 tablespoon Olive oil
  • 1 clove Garlic minced
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper

Instructions 

  1. Preheat the grill to medium-high heat.
  2. Season the chicken thighs with salt and black pepper.
  3. Grill the chicken thighs for about 10 minutes on each side, or until fully cooked.
  4. In a blender, combine mango, ancho chili, olive oil, garlic, and a pinch of salt. Blend until smooth.
  5. Serve the grilled chicken thighs with the mango ancho sauce drizzled on top.
