Ingredients

  • 1 whole Chicken spatchcocked
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper freshly ground
  • 2 cloves Garlic minced
  • 1 tablespoon Lemon juice freshly squeezed

Instructions 

  1. 1. Preheat your grill to medium-high heat.
  2. 2. Rub the chicken with olive oil, salt, pepper, garlic, and lemon juice.
  3. 3. Place the chicken skin-side down on the grill. Place the foil-wrapped brick on top of the chicken to press it down.
  4. 4. Grill for about 15 minutes, then flip the chicken and replace the brick. Grill for another 15 minutes or until the internal temperature reaches 165°F (75°C).
  5. 5. Remove the chicken from the grill and let it rest for 5 minutes before serving.
