Ingredients

  • 2 chicken breasts
  • 4 cups mixed greens
  • 2 hard-boiled eggs, chopped
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • ½ cup blue cheese, crumbled
  • 4 slices bacon, cooked and crumbled
  • ¼ cup red onion, thinly sliced
  • ¼ cup ranch dressing

Instructions 

  1. Preheat grill to medium-high heat.
  2. Season chicken breasts with salt and pepper.
  3. Grill chicken for 5-7 minutes on each side until fully cooked.
  4. Let chicken rest, then slice.
  5. In a large bowl, combine mixed greens, eggs, avocado, tomatoes, blue cheese, bacon, and red onion.
  6. Top with grilled chicken slices.
  7. Drizzle with ranch dressing and toss gently.
