Ingredients 

Main Ingredients

  • 4 fillets Cod about 6 oz each
  • 2 tablespoon Olive oil
  • 2 cloves Garlic minced
  • 1 pint Cherry tomatoes halved
  • 4 cups Spinach fresh
  • 1 teaspoon Salt to taste
  • 0.5 teaspoon Black pepper to taste

Instructions 

  1. 1. Preheat your grill to medium-high heat.
  2. 2. Brush the cod fillets with olive oil and season with salt and pepper.
  3. 3. Grill the cod fillets for about 4-5 minutes on each side, until the fish is opaque and flakes easily with a fork.
  4. 4. While the cod is grilling, heat a skillet over medium heat and add the remaining olive oil.
  5. 5. Add the minced garlic and cook for about 1 minute until fragrant.
  6. 6. Add the cherry tomatoes and cook for another 3-4 minutes until they start to soften.
  7. 7. Add the spinach and cook until wilted, about 2 minutes.
  8. 8. Serve the grilled cod on a bed of spinach and tomatoes.
