Ingredients

  • 2 ears corn, husked
  • 1 cup edamame, shelled
  • 1 cup cherry tomatoes, halved
  • 1 cup red bell pepper, diced
  • 1 cup red onion, diced
  • 2 tablespoon olive oil
  • 2 tablespoon lime juice
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions 

  1. 1. Preheat the grill to medium-high heat.
  2. 2. Grill the corn for about 10 minutes, turning occasionally, until charred and cooked through.
  3. 3. Remove the corn from the grill and let it cool. Cut the kernels off the cob and place them in a large mixing bowl.
  4. 4. Add the edamame, cherry tomatoes, red bell pepper, and red onion to the bowl with the corn.
  5. 5. In a small bowl, whisk together the olive oil, lime juice, salt, and black pepper.
  6. 6. Pour the dressing over the salad and toss to combine.
  7. 7. Serve immediately or refrigerate until ready to serve.
