Ingredients

  • 4 ears corn husked
  • 2 cups red cabbage shredded
  • 1 cup carrot shredded
  • ¼ cup cilantro chopped
  • ¼ cup lime juice
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. Preheat grill to medium-high heat.
  2. Grill corn for 10 minutes, turning occasionally, until charred.
  3. Remove corn from grill and let cool. Cut kernels off the cob.
  4. In a large bowl, combine corn, red cabbage, carrot, and cilantro.
  5. In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
  6. Pour dressing over the slaw and toss to combine.
  7. Serve immediately or refrigerate until ready to serve.
