Instructions
Preheat grill to medium-high heat.
Grill corn for 10 minutes, turning occasionally, until charred.
Remove corn from grill and let cool. Cut kernels off the cob.
In a large bowl, combine corn, red cabbage, carrot, and cilantro.
In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
Pour dressing over the slaw and toss to combine.
Serve immediately or refrigerate until ready to serve.
