Ingredients

  • 4 ears Corn husked
  • 1 cup Cherry Tomatoes halved
  • 1 cup Cucumber diced
  • ¼ cup Red Onion finely chopped
  • 2 tablespoon Olive Oil
  • 1 tablespoon Lime Juice freshly squeezed
  • ¼ cup Cilantro chopped
  • to taste Salt
  • to taste Black Pepper freshly ground

Instructions 

  1. 1. Preheat the grill to medium-high heat.
  2. 2. Grill the corn for about 10 minutes, turning occasionally, until charred and cooked through.
  3. 3. Remove the corn from the grill and let it cool slightly. Cut the kernels off the cob and place them in a mixing bowl.
  4. 4. Add the cherry tomatoes, cucumber, red onion, olive oil, lime juice, and cilantro to the bowl. Toss to combine.
  5. 5. Season with salt and freshly ground black pepper to taste. Serve immediately or chill until ready to serve.
