Main Ingredients
- 2 ears corn grilled and kernels removed
- 1 cup bulgur wheat cooked and cooled
- 1 cup cherry tomatoes halved
- 1 cup cucumber diced
- ½ cup parsley chopped
- ¼ cup mint chopped
- ¼ cup olive oil
- 2 tablespoon lemon juice freshly squeezed
- 1 teaspoon salt
- ½ teaspoon black pepper
1. Grill the corn until lightly charred. Remove kernels and set aside.
2. In a large mixing bowl, combine the cooked bulgur wheat, cherry tomatoes, cucumber, parsley, and mint.
3. Add the grilled corn kernels to the bowl.
4. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
5. Pour the dressing over the salad and toss to combine.
6. Serve immediately or chill in the refrigerator for later.
