Grilled Eggplant with Balsamic Vinegar

- 2 large eggplants sliced into rounds
- 3 tablespoon olive oil
- 2 tablespoon balsamic vinegar
- 1 teaspoon salt
- 1 teaspoon black pepper freshly ground
- 2 cloves garlic minced
- 1 tablespoon fresh basil chopped
Preheat your grill to medium-high heat.
Brush the eggplant slices with olive oil on both sides.
Season the eggplant slices with salt and pepper.
Grill the eggplant slices for about 5-7 minutes on each side, until tender and grill marks appear.
In a small bowl, mix the balsamic vinegar and minced garlic.
Once the eggplant is done, drizzle the balsamic mixture over the slices.
Garnish with chopped fresh basil before serving.
