Ingredients

  • 2 large eggplants sliced into rounds
  • 3 tablespoon olive oil
  • 2 tablespoon balsamic vinegar
  • 1 teaspoon salt
  • 1 teaspoon black pepper freshly ground
  • 2 cloves garlic minced
  • 1 tablespoon fresh basil chopped

Instructions 

  1. Preheat your grill to medium-high heat.
  2. Brush the eggplant slices with olive oil on both sides.
  3. Season the eggplant slices with salt and pepper.
  4. Grill the eggplant slices for about 5-7 minutes on each side, until tender and grill marks appear.
  5. In a small bowl, mix the balsamic vinegar and minced garlic.
  6. Once the eggplant is done, drizzle the balsamic mixture over the slices.
  7. Garnish with chopped fresh basil before serving.
