Ingredients 

Main Ingredients

  • 4 fillets Mahi Mahi about 6 oz each
  • 1 cup Coconut milk
  • 2 tablespoon Red curry paste
  • 1 tablespoon Fish sauce
  • 1 tablespoon Lime juice freshly squeezed
  • 2 teaspoon Brown sugar
  • 1 clove Garlic minced
  • 1 tablespoon Ginger grated
  • 1 tablespoon Vegetable oil
  • 1 tablespoon Cilantro chopped, for garnish

Instructions 

  1. Preheat the grill to medium-high heat.
  2. Brush the Mahi Mahi fillets with vegetable oil and season with salt and pepper.
  3. Grill the fillets for about 4-5 minutes on each side, until cooked through.
  4. In a saucepan, combine coconut milk, red curry paste, fish sauce, lime juice, brown sugar, garlic, and ginger. Bring to a simmer over medium heat.
  5. Simmer for about 10 minutes, stirring occasionally, until the sauce thickens slightly.
  6. Serve the grilled Mahi Mahi with the Thai coconut sauce drizzled over the top. Garnish with chopped cilantro.
