Ingredients

  • 1 unit Zucchini sliced
  • 1 unit Eggplant sliced
  • 1 unit Red Bell Pepper sliced
  • 4 slices Whole Grain Bread
  • 2 tablespoon Olive Oil
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper

Instructions 

  1. Preheat the grill to medium-high heat.
  2. Brush the zucchini, eggplant, and red bell pepper slices with olive oil. Sprinkle with dried oregano, salt, and black pepper.
  3. Grill the vegetables for about 3-4 minutes on each side until tender and slightly charred.
  4. Toast the whole grain bread slices on the grill for about 1-2 minutes on each side.
  5. Assemble the sandwich by layering the grilled vegetables between the toasted bread slices.
  6. Serve immediately and enjoy!
