Ingredients

  • 1 lb Okra trimmed
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper freshly ground
  • 1 cup Cherry Tomatoes halved
  • 1 tablespoon Lemon Juice freshly squeezed

Instructions 

  1. Preheat your grill to medium-high heat.
  2. In a mixing bowl, toss the okra with olive oil, salt, and black pepper.
  3. Grill the okra for about 5 minutes on each side until charred and tender.
  4. Remove the okra from the grill and let it cool slightly.
  5. In a serving bowl, combine the grilled okra, cherry tomatoes, and lemon juice. Toss gently to mix.
