  • 2 peaches, sliced
  • 1 fennel bulb, thinly sliced
  • ¼ cup olive oil
  • 2 tablespoon balsamic vinegar
  • Salt and pepper to taste
  • Fresh basil leaves

Instructions 

  1. Preheat grill to medium-high.
  2. Toss bread cubes with 2 tablespoon olive oil, salt, and pepper.
  3. Grill bread cubes until crispy, about 5 minutes.
  4. Grill peach slices until charred, about 3 minutes per side.
  5. In a large bowl, combine grilled bread, peaches, and fennel.
  6. Drizzle with remaining olive oil and balsamic vinegar.
  7. Toss to combine and season with salt and pepper.
  8. Garnish with fresh basil leaves.
