Grilled Panzanella Salad with Peaches and Fennel

Main Ingredients
- 4 cups cubed bread
- 2 peaches, sliced
- 1 fennel bulb, thinly sliced
- ¼ cup olive oil
- 2 tablespoon balsamic vinegar
- Salt and pepper to taste
- Fresh basil leaves
Preheat grill to medium-high.
Toss bread cubes with 2 tablespoon olive oil, salt, and pepper.
Grill bread cubes until crispy, about 5 minutes.
Grill peach slices until charred, about 3 minutes per side.
In a large bowl, combine grilled bread, peaches, and fennel.
Drizzle with remaining olive oil and balsamic vinegar.
Toss to combine and season with salt and pepper.
Garnish with fresh basil leaves.
