Grilled Pineapple Salad

Main Ingredients
- 1 Pineapple peeled, cored, and cut into rings
- 1 cup Cherry Tomatoes halved
- 1 cup Cucumber diced
- ¼ cup Red Onion thinly sliced
- ¼ cup Cilantro chopped
- 2 tablespoon Olive Oil
- 1 tablespoon Lime Juice freshly squeezed
- 1 teaspoon Salt to taste
- ½ teaspoon Black Pepper freshly ground
1. Preheat the grill to medium-high heat.
2. Grill pineapple rings for 2-3 minutes on each side until grill marks appear.
3. Remove pineapple from the grill and let it cool slightly. Cut into bite-sized pieces.
4. In a mixing bowl, combine grilled pineapple, cherry tomatoes, cucumber, red onion, and cilantro.
5. Drizzle with olive oil and lime juice. Season with salt and black pepper. Toss to combine.
6. Serve immediately or chill in the refrigerator for 30 minutes before serving.
