Ingredients

  • 1 pineapple peeled, cored, and cut into rings
  • 1 red bell pepper diced
  • ½ red onion diced
  • 1 jalapeño seeded and minced
  • ¼ cup cilantro chopped
  • 1 lime juiced
  • ½ teaspoon salt

Instructions 

  1. Preheat your grill to medium-high heat.
  2. Grill the pineapple rings for about 2-3 minutes on each side until grill marks appear.
  3. Remove the pineapple from the grill and let it cool. Once cooled, dice the pineapple.
  4. In a mixing bowl, combine the diced pineapple, red bell pepper, red onion, jalapeño, cilantro, lime juice, and salt.
  5. Mix well and serve immediately or refrigerate until ready to serve.
