- 1 pineapple peeled, cored, and cut into rings
- 1 red bell pepper diced
- ½ red onion diced
- 1 jalapeño seeded and minced
- ¼ cup cilantro chopped
- 1 lime juiced
- ½ teaspoon salt
Preheat your grill to medium-high heat.
Grill the pineapple rings for about 2-3 minutes on each side until grill marks appear.
Remove the pineapple from the grill and let it cool. Once cooled, dice the pineapple.
In a mixing bowl, combine the diced pineapple, red bell pepper, red onion, jalapeño, cilantro, lime juice, and salt.
Mix well and serve immediately or refrigerate until ready to serve.
