Ingredients

  • 2 Poblano peppers grilled and chopped
  • 8 Eggs beaten
  • ½ cup Milk
  • 1 cup Cheddar cheese shredded
  • 1 tablespoon Olive oil
  • to taste Salt and pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat the olive oil over medium heat.
  3. Add the grilled and chopped poblano peppers to the skillet and cook for 2-3 minutes.
  4. In a bowl, whisk together the eggs, milk, salt, and pepper.
  5. Pour the egg mixture into the skillet and cook for 5 minutes, stirring occasionally.
  6. Sprinkle the shredded cheddar cheese on top and transfer the skillet to the preheated oven.
  7. Bake for 10-15 minutes, or until the frittata is set and the cheese is melted and golden.
  8. Remove from the oven and let it cool for a few minutes before slicing and serving.
