Ingredients 

Pork Chops

  • 4 pork chops bone-in or boneless
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Nectarine Salsa

  • 2 nectarines diced
  • ¼ cup red onion finely chopped
  • 1 jalapeño seeded and minced
  • ¼ cup cilantro chopped
  • 1 tablespoon lime juice freshly squeezed
  • ¼ teaspoon salt

Instructions 

  1. Preheat your grill to medium-high heat.
  2. Brush pork chops with olive oil and season with salt and pepper.
  3. Grill pork chops for 6-7 minutes on each side, or until cooked through.
  4. While the pork chops are grilling, prepare the nectarine salsa. In a mixing bowl, combine diced nectarines, red onion, jalapeño, cilantro, lime juice, and salt. Mix well.
  5. Serve grilled pork chops with a generous spoonful of fresh nectarine salsa on top.
