Ingredients 

Main Ingredients

  • 4 large Portobello mushrooms stems removed
  • 2 tablespoon Olive oil
  • 1 teaspoon Balsamic vinegar
  • 4 slices Provolone cheese
  • 4 buns Whole wheat buns split and toasted
  • 1 cup Arugula
  • 1 medium Tomato sliced

Instructions 

  1. 1. Preheat the grill to medium-high heat.
  2. 2. In a mixing bowl, combine olive oil and balsamic vinegar. Brush the mixture onto both sides of the portobello mushrooms.
  3. 3. Place the mushrooms on the grill, gill side down, and cook for about 5-7 minutes. Flip and cook for another 5-7 minutes until tender.
  4. 4. During the last 2 minutes of cooking, place a slice of provolone cheese on each mushroom and allow it to melt.
  5. 5. Assemble the sandwiches by placing a grilled mushroom on the bottom half of each bun. Top with arugula, tomato slices, and the top half of the bun.
