Instructions 

  1. Preheat your grill to medium-high heat.
  2. In a large bowl, combine sliced potatoes, carrots, and onions. Drizzle with olive oil, and season with salt and pepper. Toss to coat.
  3. Divide the vegetable mixture evenly among four pieces of aluminum foil. Fold the foil over the vegetables and seal the edges to create packets.
  4. Place the foil packets on the preheated grill. Cook for 25-30 minutes, turning occasionally, until the vegetables are tender.
  5. Carefully open the packets (watch out for steam) and serve hot.
