Ingredients

  • 1 rack lamb about 8 ribs
  • 2 tablespoon olive oil
  • 4 cloves garlic minced
  • 1 tablespoon rosemary chopped
  • 1 teaspoon thyme chopped
  • 1 teaspoon salt
  • ½ teaspoon black pepper freshly ground

Instructions 

  1. 1. Preheat your grill to medium-high heat.
  2. 2. In a small bowl, mix together the olive oil, garlic, rosemary, thyme, salt, and pepper.
  3. 3. Rub the mixture all over the lamb rack.
  4. 4. Place the lamb on the grill, fat side down. Grill for about 4 minutes on each side to sear.
  5. 5. Move the lamb to indirect heat and continue grilling for another 15-20 minutes, or until the internal temperature reaches 130°F for medium-rare.
  6. 6. Remove the lamb from the grill and let it rest for 10 minutes before slicing.
