Grilled Salmon with Bacon and Corn Relish Recipe

Main Ingredients
- 4 fillets Salmon
- 6 slices Bacon chopped
- 2 cups Corn fresh or frozen
- 1 cup Cherry Tomatoes halved
- 1 tablespoon Olive Oil
- 1 teaspoon Salt to taste
- 0.5 teaspoon Black Pepper to taste
Preheat the grill to medium-high heat.
Season the salmon fillets with salt and pepper.
Grill the salmon for 4-5 minutes on each side, or until cooked through.
In a skillet, cook the chopped bacon until crispy. Remove and set aside.
In the same skillet, add the corn and cook for 3-4 minutes. Add the cherry tomatoes and cook for another 2 minutes.
Mix in the cooked bacon with the corn and tomatoes. Season with salt and pepper to taste.
Serve the grilled salmon topped with the bacon and corn relish.
