Ingredients 

Main Ingredients

  • 4 fillets Salmon
  • 6 slices Bacon chopped
  • 2 cups Corn fresh or frozen
  • 1 cup Cherry Tomatoes halved
  • 1 tablespoon Olive Oil
  • 1 teaspoon Salt to taste
  • 0.5 teaspoon Black Pepper to taste

Instructions 

  1. Preheat the grill to medium-high heat.
  2. Season the salmon fillets with salt and pepper.
  3. Grill the salmon for 4-5 minutes on each side, or until cooked through.
  4. In a skillet, cook the chopped bacon until crispy. Remove and set aside.
  5. In the same skillet, add the corn and cook for 3-4 minutes. Add the cherry tomatoes and cook for another 2 minutes.
  6. Mix in the cooked bacon with the corn and tomatoes. Season with salt and pepper to taste.
  7. Serve the grilled salmon topped with the bacon and corn relish.
