Ingredients 

Salmon and Pesto

  • 4 fillets Salmon about 6 oz each
  • 2 cups Fresh Basil Leaves
  • ½ cup Olive Oil
  • ¼ cup Pine Nuts toasted
  • 2 cloves Garlic minced
  • ½ cup Parmesan Cheese grated
  • 1 tablespoon Lemon Juice freshly squeezed
  • to taste Salt and Pepper

Instructions 

  1. Preheat your grill to medium-high heat.
  2. Season the salmon fillets with salt and pepper.
  3. Grill the salmon for about 6-7 minutes on each side, or until fully cooked.
  4. While the salmon is grilling, prepare the pesto. In a blender, combine basil leaves, olive oil, pine nuts, garlic, Parmesan cheese, and lemon juice. Blend until smooth.
  5. Once the salmon is done, top each fillet with a generous spoonful of pesto.
  6. Serve immediately and enjoy!
