  • 1 lb Scampi (large shrimp) peeled and deveined
  • 2 tablespoon Olive oil
  • 3 cloves Garlic minced
  • 1 tablespoon Lemon juice freshly squeezed
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper freshly ground
  • 2 tablespoon Parsley chopped

Instructions 

  1. 1. Preheat the grill to medium-high heat.
  2. 2. In a bowl, combine olive oil, garlic, lemon juice, salt, and black pepper.
  3. 3. Add the scampi to the bowl and toss to coat evenly.
  4. 4. Thread the scampi onto skewers.
  5. 5. Grill the scampi for 2-3 minutes on each side, until opaque and cooked through.
  6. 6. Remove from the grill and sprinkle with chopped parsley before serving.
