Ingredients 

Salad Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 head romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced avocado
  • ½ cup hard-boiled eggs, chopped
  • ¼ cup red onion, thinly sliced

Louie Dressing Ingredients

  • ½ cup mayonnaise
  • ¼ cup ketchup
  • 1 tablespoon lemon juice
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon hot sauce
  • 1 tablespoon chopped fresh parsley
  • to taste salt and pepper

Instructions 

  1. 1. Preheat grill to medium-high heat.
  2. 2. Grill shrimp for 2-3 minutes on each side until opaque and cooked through. Set aside.
  3. 3. In a mixing bowl, whisk together all Louie dressing ingredients until well combined.
  4. 4. In a large bowl, combine romaine lettuce, cherry tomatoes, avocado, hard-boiled eggs, and red onion.
  5. 5. Add grilled shrimp to the salad and drizzle with Louie dressing. Toss to coat evenly.
  6. 6. Serve immediately and enjoy!
