  • 1 piece Bell pepper sliced
  • 1 piece Zucchini sliced
  • 1 piece Red onion sliced
  • 2 tablespoons Olive oil
  • 1 pinch Salt
  • 1 pinch Black pepper
  • 4 slices Whole grain bread toasted
  • 2 tablespoons Hummus

Instructions 

  1. 1. Preheat the grill to medium-high heat.
  2. 2. Toss the sliced bell pepper, zucchini, and red onion with olive oil, salt, and black pepper.
  3. 3. Grill the vegetables for about 5-7 minutes on each side until tender and slightly charred.
  4. 4. Toast the whole grain bread slices.
  5. 5. Spread hummus on each slice of toasted bread.
  6. 6. Assemble the sandwich by layering the grilled vegetables between two slices of bread.
