Grilled Vegetables with Avocado and Goat Cheese

- 2 cups Bell Peppers, sliced
- 2 cups Zucchini, sliced
- 1 cup Red Onion, sliced
- 2 tablespoons Olive Oil
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 1 large Avocado, diced
- ½ cup Goat Cheese, crumbled
Preheat your grill to medium-high heat.
In a mixing bowl, toss the bell peppers, zucchini, and red onion with olive oil, salt, and black pepper.
Grill the vegetables for about 10-15 minutes, turning occasionally, until they are tender and slightly charred.
