Ingredients 

Main Ingredients

  • 1 large Zucchini cut into chunks
  • 1 large Red Bell Pepper cut into chunks
  • 1 large Yellow Bell Pepper cut into chunks
  • 1 large Red Onion cut into chunks
  • 8 oz Mushrooms whole
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 1 teaspoon Dried Oregano

Instructions 

  1. Preheat your grill to medium-high heat.
  2. Thread the zucchini, bell peppers, red onion, and mushrooms onto skewers.
  3. Brush the veggies with olive oil and sprinkle with salt, black pepper, and dried oregano.
  4. Grill the skewers for about 10 minutes, turning occasionally, until the vegetables are tender and slightly charred.
  5. Serve hot and enjoy!
