  • 2 large zucchinis sliced into rounds
  • 1 cup cherry tomatoes halved
  • 2 tablespoon olive oil
  • 1 tablespoon fresh mint chopped

Instructions 

  1. Preheat your grill to medium-high heat.
  2. Toss the zucchini slices and cherry tomatoes with olive oil, salt, and pepper.
  3. Grill the zucchini slices for about 3-4 minutes on each side until tender and slightly charred.
  4. Remove from the grill and place on a serving platter. Top with the cherry tomatoes and chopped mint.
  5. Serve immediately.
