Grilled Zucchini with Tomatoes and Mint

- 2 large zucchinis sliced into rounds
- 1 cup cherry tomatoes halved
- 2 tablespoon olive oil
- 1 tablespoon fresh mint chopped
- to taste salt and pepper
Preheat your grill to medium-high heat.
Toss the zucchini slices and cherry tomatoes with olive oil, salt, and pepper.
Grill the zucchini slices for about 3-4 minutes on each side until tender and slightly charred.
Remove from the grill and place on a serving platter. Top with the cherry tomatoes and chopped mint.
Serve immediately.
