  • 1 head Cauliflower cut into florets
  • 2 tablespoon Olive Oil
  • 4 slices Bread your choice
  • 1 cup Cheddar Cheese shredded
  • 1 tablespoon Butter softened

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Toss cauliflower florets with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20 minutes, until tender and golden.
  3. Butter one side of each bread slice. Place two slices, buttered side down, on a skillet over medium heat.
  4. Top with shredded cheese, roasted cauliflower, and another slice of bread, buttered side up.
  5. Cook until golden brown and cheese is melted, about 3-4 minutes per side.
