Roasted Cauliflower Grilled Cheese

- 1 head Cauliflower cut into florets
- 2 tablespoon Olive Oil
- 4 slices Bread your choice
- 1 cup Cheddar Cheese shredded
- 1 tablespoon Butter softened
Preheat oven to 400°F (200°C).
Toss cauliflower florets with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20 minutes, until tender and golden.
Butter one side of each bread slice. Place two slices, buttered side down, on a skillet over medium heat.
Top with shredded cheese, roasted cauliflower, and another slice of bread, buttered side up.
Cook until golden brown and cheese is melted, about 3-4 minutes per side.
