Ingredients

  • 2 pcs Zucchini sliced
  • 1 pcs Eggplant sliced
  • 1 pcs Red Bell Pepper sliced
  • 1 pcs Yellow Bell Pepper sliced
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper freshly ground
  • 2 tablespoon Balsamic Vinegar
  • 1 tablespoon Fresh Basil chopped

Instructions 

  1. Preheat the grill to medium-high heat.
  2. In a mixing bowl, toss the sliced zucchini, eggplant, and bell peppers with olive oil, salt, and black pepper.
  3. Grill the vegetables for about 5-7 minutes on each side until they are tender and have grill marks.
  4. Remove the vegetables from the grill and let them cool slightly.
  5. In a serving bowl, combine the grilled vegetables with balsamic vinegar and chopped fresh basil. Toss gently to mix.
  6. Serve the salad warm or at room temperature.
