Instructions
Preheat the grill to medium-high heat.
In a mixing bowl, toss the sliced zucchini, eggplant, and bell peppers with olive oil, salt, and black pepper.
Grill the vegetables for about 5-7 minutes on each side until they are tender and have grill marks.
Remove the vegetables from the grill and let them cool slightly.
In a serving bowl, combine the grilled vegetables with balsamic vinegar and chopped fresh basil. Toss gently to mix.
Serve the salad warm or at room temperature.
