Spicy Tomato Bisque with Grilled Brie Toast

Bisque
- 2 tablespoon olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon red pepper flakes
- 2 cans crushed tomatoes (28 oz each)
- 2 cups vegetable broth
- 1 cup heavy cream
- to taste salt and pepper
Grilled Brie Toast
- 8 slices bread
- 8 slices brie cheese
- 2 tablespoon butter
Heat olive oil in a saucepan over medium heat. Add chopped onion and cook until translucent.
Add minced garlic and red pepper flakes. Cook for another minute.
Add crushed tomatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
Use a blender to puree the soup until smooth. Return to the saucepan and stir in heavy cream. Season with salt and pepper to taste.
For the grilled brie toast, butter one side of each bread slice. Place brie cheese between two slices, buttered sides out.
Heat a grill pan over medium heat. Grill the sandwiches until golden brown and the cheese is melted.
Serve the bisque hot with grilled brie toast on the side.
