  • 2 ears Corn husked
  • 1 cup Cherry Tomatoes halved
  • 1 cup Cucumber diced
  • ¼ cup Red Onion thinly sliced
  • 2 tablespoon Olive Oil
  • 1 tablespoon Lemon Juice freshly squeezed
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper freshly ground
  • ¼ cup Feta Cheese crumbled

Instructions 

  1. 1. Preheat the grill to medium-high heat.
  2. 2. Grill the corn for about 10 minutes, turning occasionally, until charred and cooked through. Let it cool slightly, then cut the kernels off the cob.
  3. 3. In a large mixing bowl, combine the grilled corn, cherry tomatoes, cucumber, and red onion.
  4. 4. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper. Pour over the salad and toss to combine.
  5. 5. Sprinkle the crumbled feta cheese on top before serving.
