Thai Grilled Chicken with Sweet Chile Dipping Sauce

Chicken Marinade
- 4 pieces chicken thighs boneless, skinless
- 2 tablespoon soy sauce
- 2 tablespoon fish sauce
- 1 tablespoon brown sugar
- 2 cloves garlic minced
- 1 tablespoon lime juice freshly squeezed
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon black pepper freshly ground
Sweet Chile Dipping Sauce
- ½ cup sweet chile sauce
- 1 tablespoon lime juice freshly squeezed
- 1 teaspoon fish sauce
1. In a mixing bowl, combine soy sauce, fish sauce, brown sugar, minced garlic, lime juice, ground coriander, ground cumin, and black pepper. Add chicken thighs and marinate for at least 30 minutes.
2. Preheat the grill to medium-high heat. Grill the chicken thighs for about 5-7 minutes on each side, or until fully cooked and slightly charred.
3. In a small bowl, mix sweet chile sauce, lime juice, and fish sauce to make the dipping sauce.
4. Serve the grilled chicken with the sweet chile dipping sauce on the side.
